A hotter-than-it-looks hatch chile can recalibrate your entire morning, which is something every Santa Fean learns before they learn to drive. The local breakfast spread runs from chef-owned plates plated like gallery pieces to counter joints where the mole and margaritas arrive with equal speed.

I have eaten trout that converted a table of skeptics and blue corn pancakes with a grit that felt like authenticity. One rule applies across all of them: arrive hungry and surrender your schedule.

The list below starts where the line forms.

Highlights
Freshly cooked, worth the wait
Legit bakery items and pastries
French toast and pesto omelette
Prompt service, well-prepared plates
Limited parking, but don't stop

Dolina Bakery & Cafe does not reward the impatient. I waited, as did everyone else, but the wait was not punishment; it was preparation. The French toast arrived golden, custardy at the center, and the pesto omelette was a study in restraint, the herbs bright against the eggs. The pastries, too, were legitimate, flaky, and buttery in the ways that matter. Service was prompt once the food emerged, and every plate was composed with care. Parking is limited, as is patience in Santa Fe, but do not stop. The breakfast justifies the circling.

It is not the most inventive breakfast in town, but it may be the most comforting. I left full, satisfied, and already planning my return.
